Serious tailgaters need serious eats! These tailgate breakfast sandwiches offer a warm and satisfying way to start your long day of tailgating for your favorite team (The Eagles!).

Ingredients
  

  • 4 large eggs
  • 4 slices pork roll
  • 4 slices cooked bacon
  • 4 slices cheese
  • 4 sliced English muffins
  • 1 tbsp butter

Instructions
 

  • On one side of the tailgate grill, cook the pork roll. It should cook quickly so you'll need to flip over each piece after two to three minutes. Also warm up the precooked bacon strips. You can use a bacon press for extra crispy pork roll and bacon if you like!

  • While the meat is cooking, toast the English muffins or buns, sliced side facing down. They are SO delicious this way! When you flip the meat over, move the buns on top to keep them warm.

  • Make sure the plate side is installed on one side of the tailgate grill (if you're using the Coleman Roadtrip Tailgate grill). Melt the butter on the cooking surface and crack the eggs onto the grill.

  • After flipping the eggs, place sliced cheese on top of each fried egg so it has time to melt.

  • Finally, remove the English muffins and set them on a large platter. Create your triple breakfast stack - pork roll, fried egg, and cheese, stacking them directly on the tailgate grill.

  • Lastly, transfer the stacks to the English muffins, top with bacon, serve, and enjoy!
